you could do that but this way is still a perfectly acceptable way..."What you shouldn't say to the nice policeman." is more of the formal way.. and "What not to say to the nice policeman." is more of what would be said in a everyday conversation.. so you can decide how you want to put it..

I changed them. Thank's for your support. I'm not a native english speaker. For me both variations sound a bit strange. What do you think about:

Is that more appropriate?

In these policeman jokes you should say "What not to say to the nice policeman:" not "What to not say to the nice policeman:"
